Historically, winemaking is the main agro-industrial economic activity in the province of Mendoza, Argentina. Furthermore, due to the high oenological value of the Malbec varietal, it has become the flagship strain of this country. During aging, the chemical and organoleptic composition of the wines is subject to changes depending on the storage conditions (whether or not barrels are used and their characteristics, time, temperature, O2 level, type of closure). However, the combined effect of these factors on the chemical and organoleptic composition of Malbec wines has not yet been studied. During the 2015 harvest, Malbec grapes (San Pablo, Tupungato, Mendoza) were vinified according to a standardized protocol. Part of the wine was bottled in 750 mL bottles and the other part was aged in French oak barrels (new and reused) for 6, 12, and 18 months. The wines kept in barrels completed their aging in bottles until they reached a total of 24 months of aging. The bottles were corked with natural cork and screw caps and were stored in rooms with a temperature of 15 and 25°C. Sampling was carried out at 0, 2, 4, 6, 9, 12, 15, 18, and 24 months of the trial; and chemical, microbiological, and routine analyses were carried out at each point. Sensory analyses were carried out every 6 months from the beginning to the end of the study. In general, neither the type of closure used nor the use of the barrel generated significant differences in most of the variables studied. Only those compounds that are depleted by the use of the barrel (ellagic tannins, furanoids, volatile phenols and wood lactones); together with the concentration of anthocyanins, the index of small polymeric pigments and hue of the wines depended on the use of the barrels. While the storage temperature was a key accelerator of the aging process of all bottled wines. At 24 months, the Malbec cv. Wines stored at 15°C were associated with high perceptions of color intensity and violet tint, these descriptors presented a high positive correlation (r≈1) with free sulfur, tannins and anthocyanins and saturation. In contrast, wines aged at 25°C were associated with low perceptions of color intensity and violet tint descriptors and high perceptions of dried vegetable (tobacco and tea) and dehydrated fruit (blueberry, strawberry and raspberry jam) aromas. The Malbec wine (Mendoza, Argentina) analyzed was found to be very stable to the type of closure used and the use of the barrel, but highly sensitive to the combination of time:temperature storage factors. Aging for 6-9 months (greater extraction of compounds) in new barrels would only be justified if differences in the aromatic profile of the wine were desired. All of this is key in making decisions about the style of aged wine sought, and in the costs associated with barrel selection, and refrigeration of the bottle until the moment of consumption of high-quality wine.
